Rémoulade
Sauce
Rémoulade Sauce is great chilled and served with fresh
cooked seafood and fish. This recipe contains different fresh herbs: use those
listed or your favorite. We have listed measured amounts for all the ingredients;
use more or less to suit your tastes. We like this recipe made with tart dill
pickles.
Ingredients:
About 1 1/2 cups mayonnaise
1/4 c pickles, chopped
2 Tbsp capers (if large, chop them)
2 tsp fresh parsley chopped
2 tsp fresh chervil chopped
2 tsp fresh chives chopped
1 tsp fresh tarragon chopped
1 1/2 tsp Dijon mustard
1 tsp white onion, fine chopped
1/2 tsp, more or less, anchovy paste
Splash of Pickle juice or Verjus, optional
Procedure:
Mix all ingredients
together, adding a little pickle juice or Verjus if desired to taste. Serve
chilled.
