Recipes: Chimichurri Sauce

Sauce from Argentina

Basic Chimichurri Sauce

Thin it out with more olive oil and red wine vinegar and use as a marinade. Great served with grilled steaks or poultry.

1 cup Italian flat leaf parsley
1/2 cup cilantro leaves
1/2 cup olive oil
1/3 cup red wine vinegar
1/8 cup chopped onion
2-3 medium garlic cloves
1/2 - 3/4 teaspoon dried chili flakes (depending on desired heat)
up to 1/2 teaspoon salt

Whirl everything in a food processor. Adjust taste with salt. Serve.
