Amuse Bouche
From the French, meaning "to
please or amuse the mouth."
Smoked
Salmon, Crème Fraîche, Ossetra Caviar
Place crème
fraîche on spoon. Gently spoon on some Ossetra caviar. Top with minced
smoked salmon, and a sprig of fresh chervil.
Preserved
Lemon and Tomato Salad
Stir
together diced fresh tomatoes, diced preserved lemons and very small sprigs
of parsley.
Black
Olive Tapenade, Tomato Concassé
On spoon, place
an amount of black olive tapenade. Top with tomato concassé.
