This pan is made
of blue steel. "Blue" steel isn't painted or coated steel.
It is simply a steel which has undergone a form of heat
treatment which gives it its bluish color, and which protects it temporarily
against oxidation.
A good steel
pan is one that has been seasoned, meaning it has become black after
being used several times.
Care: to ensure
that the frying pan keeps its
properties and in order to avoid oxidation, wash the pan in hot water
without soap, then wipe it immediately with a paper towel. It may
be then oiled if desired and stored in a dry place.
